Ribolla Gialla Venezia Giulia is a fresh and elegant white wine, produced in the company's vineyards located in Buttrio, in the province of Udine . The grapes are vinified in steel at a controlled temperature, with a brief cold maceration to extract the grape's most delicate aromatic components.
The colour is straw yellow with greenish reflections , while on the nose it opens with a delicate and slightly aromatic scent , reminiscent of tropical fruit such as pineapple, banana and ripe apricot , accompanied by a light Mediterranean spicy note .
On the palate it confirms itself as fine, elegant and harmonious , with a pleasant aroma and a well-balanced freshness .
Perfect as an aperitif , it pairs excellently with modern appetizers, finger food, savory pies, fish mousse, fish-based second courses (grilled or boiled), fresh cheeses and vegetables such as Pachino tomatoes .
Serve at 10-12°C.
The harvest takes place in the first days of September. The grapes are transferred into steel vats10–12 °C for 12–36 hours, to promote the aromatic extraction from the skins. After the separation of the must, thefermentation takes place with selected yeasts at 18°C for approximately 15 days.
The wine then comesrefined in steel tanks, to maintain freshness, aromatic cleanliness and varietal typicality.
